1/31/2015 – Would this be a good steel for use in a pork meat packing plant?
Response From Southern Indiana Butcher Supply: This steel may be too aggressive for simple re-aligning of the edge where a fine cut or polished steel may be more practical. This steel is more useful for bringing back edges that are dulled past what a simple re-alignment could achieve but where the knife is perhaps still not quite in need of full edge reconditioning.
