To use:
Gas and Electric Grills: Soak two handfuls of wood chips in water for 15 minutes. Drain chips and place in a wood chip smoker box or wrap in aluminum foil, leaving the ends open for ventilation. Remove cooking grid and place directly on heat source underneath grid. When chips begin to smoke (7-10 minutes), you are ready to cook!
Charcoal Grills: Soak two handfuls of wood chips in water for 15 minutes. Remove cooking grid. Stack charcoal in pyramid and light. When charcoal is ashed over, drain chips and scatter over hot coals. Chips will begin to smoke immediately. Replace cooking grid and start grilling.
Cook with: chicken, ribs, pork, fish, lamb, turkey.
