TUBED Natural Lamb Casings

Whisker free, pre-flushed, tubed, and vacuum bagged high quality natural sausage casings. Stuffing capacities vary according to the number of links per pound and how tight the casing is stuffed. Although our natural lamb casings are held to firm specifications, there may be a slight variance in stuffing diameter, hence 20mm - 22mm. This may also have an impact on stuffing capacity. Normal stuffing capacity for half a hank of lamb casings is around 26 pounds. Use for fresh or smoked sausage piggy links.

What does "TUBED" mean? Tubed means the natural casings are on a plastic sleeve. Simply slide the sleeve onto the stuffing horn and pull to remove the plastic sleeve leaving the casings on the horn ready to stuff! This is the quickest and most efficient way to use natural casings.

Store casings in the original bag in the refrigerator until time for use. Hog casings stored in the original bag have been shown to keep up to four years in the refrigerator. Some odor is normal with natural casings especially in warm weather and this should disappear with a rinse in fresh water. Casings should be soaked in luke warm water for 1 hour before use. This helps to open the pores of the casing and makes them easier to handle. DO NOT USE HOT WATER as this may actually cook the casing rendering them useless. Drain unused casings and store covered in dry salt sealed in a plastic dish or plastic bag in the refrigerator. Casings stored in this manner have been shown to keep for up to 5 years. DO NOT FREEZE

2/22/2016 – when storing for a long time after opening will Morton table salt work or another type of salt is needed

Response From Southern Indiana Butcher Supply: Table salt should work fine but if you have a non-iodized salt available, it may be a better choice.

What storage method is reccomended for your natural hog casings and what is the estimated storage life before they must be used?

Response From Southern Indiana Butcher Supply: Studies have shown these natural hog casings to keep up to four years refrigerated in the original sealed vacuum bag. After opening, the casings will keep in refrigeration for a week or two in clean fresh water in a covered container. Keep refrigerated and the water fresh and clean and the casings will keep several weeks. It is normal for the casings to develop some odor and this will disappear with a fresh rinse or two. To store for long periods of time after opening, drain the casings, pack in dry salt, seal in a zip lock bag and keep refrigerated. Freezing for long periods of time is not recommended as freezing can cause the natural oils in the casing to leach out rendering them weak and brittle.
