Response From Southern Indiana Butcher Supply: Usually you may try for around a 10% ratio of cheese in the finished product. For example if you were making a 25 pound batch you would use 22.5 pounds of meat and trim and add 2.5 pounds of cheese to bring the weight up to 25 pounds total. Of course the amount of cheese can be adjusted more or less to suit personal tastes.
