Hi-Temp or Restricted Melt cheese contains less fat and moisture than regular cheese allowing it to withstand higher cooking temperatures before melting. How much to use? A good mix is a 10% ratio. Use 2.5 pounds of cheese to a 25 pound batch of product. High temp cheese will keep for several months in the freezer.
