9/27/2016 – Legg's Fresh Hot Link seasoning #112 has salt and dextrose, new to sausage making do I need any type of curing salt or do I cook and freeze my links
Response From Southern Indiana Butcher Supply: The Legg's Fresh Hot link seasoning is formulated to produce a fresh sausage product and as such you would not use a cure. If you wish to cold smoke the product then the use of cure would become necessary. Although fresh sausage is usually stuffed and frozen in its raw state, you may if you wish, pre-cook and freeze the sausage in order to facilitate convenience at the time of preparation.
